Ingredients

  • 1 cooked chicken breast (3 ounces)
  • 2 cups sweet butter lettuce
  • 1/2 cup sliced strawberries
  • 1/4 cup pineapple chunks, fresh or canned
  • 1/4 cup mandarin oranges (1 fruit cup)
  • 1-1/2 tablespoons sugar free poppyseed dressing

Preparation

  1. Cut salad into bite size pieces, drain mandarin oranges. If you use canned pineapple, drain pineapple.
  2. Slice cooked chicken breast into strips. Layer lettuce, fruit and chicken in a medium bowl. Top with dressing.

Helpful hints

A left-over cooked grilled or roasted chicken breast works great with this recipe and creates an easy lunch. Use half a chicken breast if on a lower protein diet.

A different vinaigrette can be used. Look for dressing that has less than 200 mg of sodium per 2 tablespoon serving.
