Ingredients
- 1 cup white rice, uncooked
- 1/4 cup canola oil
- 1/4 cup onion
- 1 clove garlic
- 1/4 cup low-sodium tomato sauce
- 3 cups water
- 1/4 teaspoon salt (optional)
Preparation
- Chop onion and garlic.
- In a skillet, heat oil over medium-high heat. Add rice and cook until browned, stirring frequently.
- Add onion and garlic; sauté until tender.
- Add tomato sauce, water and salt.
- Cover and simmer about 20 minutes until water is absorbed.
Helpful hints
- Omit salt if regular tomato sauce is used instead of low sodium. The sodium content is about the same.
- For best results, resist lifting lid from skillet when cooking rice.
