Ingredients

  • 1 teaspoon cinnamon
  • 2 teaspoons sugar
  • 2 ’Anjou pears
  • 4 teaspoons butter
  • 2 cups cranberry juice

Preparation

  1. Mix cinnamon and sugar in a small bowl.
  2. Cut pears in half and using a spoon scoop out seeds and stem.
  3. Make a thin slice across round part of pear, so that it lays flat in baking dish.
  4. Place pears skin side down in a baking dish and sprinkle tops with cinnamon and sugar mix.
  5. Place 1 teaspoon butter in the seed hole of each pear. 
  6. Pour juice in bottom of pan.
  7. Cover with foil and bake at 350° F approximately 30 minutes or until pear is soft when poked with fork.

Helpful hints

  • If your baking dish is shallow you may need less juice. The juice should only come halfway up the side of the pears.
  • Pour juice over pears before serving if desired. 
  • For people with diabetes use low calorie cranberry juice and subar substitute instead of sugar.
