Ingredients

  • 4 celery ribs (medium 8-in)
  • 2 tablespoons red bell pepper
  • 4 tablespoons hummus

Preparation

  1. Trim the celery rib ends. Cut the red bell pepper into 1/4-inch square pieces.
  2. Fill each celery rib with 1 tablespoon of hummus.
  3. Cut each celery rib into 3 pieces
  4. Place 2 pieces of red bell pepper on each piece of hummus-filled celery.

Helpful hints

  • Mix it up with different flavored hummus blends.
  • Place hummus in a plastic bag, snip the corner and pipe onto the celery log. 
  • Instead of roasted red peppers you can substitute a small jar of diced pimentos if preferred.
