Ingredients

  • 1 cup all-purpose white flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter
  • 8 ounces cream cheese
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar (divided use)
  • 3 cups strawberries, divided use
  • 1 tablespoon cornstarch

Preparation

  1. Preheat oven to 350º F.
  2. In a medium bowl, mix flour, 1/2 cup granulated sugar and butter together to form a dough. Press dough into a round pizza pan and bake for 15 minutes. Cool to room temperature.
  3. Beat cream cheese, vanilla and sugar until fluffy. Spread over cooled crust. Slice 2 cups strawberries and layer over cream cheese filling.
  4. Mash the remaining cup strawberries. In a medium sauce pan, cook the mashed strawberries, remaining 1/4 cup granu.lated sugar and cornstarch until the sauce is clear. Spread over the sliced berries. Chill for at least 1 hour.
  5. Cut into 12 portions and serve.

Helpful hints

  • Substitute prepared cookie dough for homemade dough. Choose the brand lowest in sodium.
  • Splenda® instead of sugar will reduce calories to 207 and carbohydrate to 15 grams. Count as one carbohydrate choice.
