Spaghetti-Basil Frittata

Frittata Basil Spaghetti

Ingredients

  • 1/3 cup green onion
  • 2 tablespoons fresh basil 
  • 2-1/2 cups whole wheat spaghetti, cooked
  • 1/3 cup 1% low fat milk
  • 4 large eggs
  • 2 large egg whites
  • 1/4 teaspoon black pepper
  • 2 ounces mozzarella cheese

Preparation

  1. Chop green onion and basil; set aside.
  2. Coat a medium non-stick skillet with 2 teaspoons olive oil. Spread cooked spaghetti noodles evenly in skillet and cook over medium heat for 2 minutes.
  3. Whisk milk, eggs, egg whites and black pepper together in a bowl. Gently pour over pasta. Sprinkle the top of the frittata with cheese, green onions and basil. Cover and cook for approximately 8 minutes until set.
  4. Cut the frittata into 4 wedges and serve. 

Helpful hints

  • Top with 1/4 cup delicious Roasted Red Pepper Tomato Sauce from the DaVita.com recipe collection.
  • Substitute refined spaghetti for whole wheat if preferred.
  • Note to dietitians:  This is a great recipe idea to serve at food sampling events. Double the recipe and cook in an electric skillet. Pre-cook/prep the pasta and sauce. Place a basil plant on the table for aroma and to demonstrate use of fresh herbs.

I put a little spin on this recipe. I added capellini zucchini curls, minced garlic and savory pepper. i baked in the oven in non stick pie pan. i don't have non stick fry pans and cast iron is too heavy flip over. thank you for a great idea, made excess and froze for lunch at work@

Trying to find White Cabbage. Have ask the workers in the area of the food market and they aren't sure. Thanks for any answers. Dietitian comment: My understanding is white cabbage and green cabbage are the same--except once the green cabbage is stored (blanched) and the outer leaves are removed it is white/pale green in color with a sweeter, less peppery taste. Not sure which recipe you were looking at as this one does not call for cabbage.

may try this recipe but what is, "refined spaghetti? Dietitian comment: It is the traditional durum wheat pasta--as opposed to the whole wheat pasta.

This looks delicious, but I understood we were to only use white flour. Is that true? I haven't made this recipe yet, but it looks delicious. I was required to make a rating. Dietitian comment: Today's kidney diet does include whole grains because they provide fiber and are a healthier choice compared to many refined grains. Ask your dietitian for guidance on your individualized diet plan.

Linda39 says she uses Daiya Dairy-Free Cheese. That sounds good. I will try to find some equivalent locally. Is Liquid Egg Substitute okay to use in DaVita's recipes? I haven't tried this recipe yet so I can't rate it. Some liquid egg products have phosphate additives so compare brands to see if there is one without the additives. You can also make it with egg whites if cholesterol is a concern.

Using Liquid Egg Substitute and Daiya Dairy-Free Cheese will drop the phosphorus level significantly. Daiya Mozzarella Cheese 2 oz is 15 phosphorus and 15 potassium and is quite good. And it melts!

Great, But I don't use cheese. Phosphorus is high at 279 mg.
