Ingredients

  • 2/3 cup long grain and wild rice blend, uncooked 
  • 1 tablespoon onion, minced
  • 1 tablespoon fresh parsley
  • 1 cup carrots
  • 8 ounces chicken breast, cooked
  • 2 tablespoons butter
  • 1/4 cup all-purpose white flour
  • 5 cups low-sodium chicken broth  
  • 1 tablespoon slivered almonds (optional)

Preparation

  1. Combine rice with 2 cups broth 1/2 cup water. Cook in a rice cooker or on the stove top.
  2. Mince onion and parsley. Grate carrots. Chop chicken.
  3. Melt butter in a saucepan; add onion and sauté until tender.
  4. Blend in flour; gradually add chicken broth.
  5. Cook over medium heat, stirring constantly, until mixture thickens slightly.
  6. Stir in rice, chicken, and carrots. Simmer 5 minutes.
  7. Add almonds and garnish with chopped parsley before serving.

  • Prepare rice according to package, omitting salt or seasoning package if included.

Is there anyone who knows of a recipe for chicken broth that is VERY low in salt, pottasium and phos ? I have a crock pot and could use it. I want to use the broth for cooking other foods or as in a sauce with a drop of flour.

Excellent soup! I made the soup with everything but the rice. I prepared two kinds of rice so each family member could choose. This kept my kidney kid eating what was healthy for her, as well as those of us who are trying to eat more whole grains and brown rice. We ladled soup over the rice in our soup bowl. It was delicious! The almonds were a great touch!

I am in a book club with wonderful friends who always prepare a lunch of Davita recipes. Last week we had Chicken Wild Rice Soup. It was delicious. Everyone enjoyed!

Don’t know a recipe, but Organic Imagine Free Range Chicken Broth is 115 mg sodium (5%) and 90 mg potassium (2%) per cup. This chicken rice soup recipe is delicious.

Can this be frozen? Cooking for a relative, so need to divide this soup into portion-control containers and then put into the freezer. So, not sure what freezing will do this soup. Any ideas?? I have not tried it but I believe it can be frozen and reheated in the microwave after thawing in the refrigerator.

What can I use in place of the flour? I don't use wheat flour or rice flour? Dietitian comment: The flour is for thickening. You can substitute other thickeners like corn starch, arrowroot or tapioca starch. Adjust the amount as follows: 1/4 cup wheat flour = 2 tablespoon cornstarch = 2 tablespoon tapioca = 1 tablespoon arrowroot.
