Ingredients

  • 2 tablespoons olive oil
  • 4 stalks of celery, chopped
  • 1 medium onion, diced
  • 2 pounds ground beef
  • One 15oz can tomato sauce
  • Two 15oz cans diced tomatoes
  • 4 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 teaspoon black pepper

Preparation

  1. In a large stock pot, heat olive oil over medium heat.  Add celery and onion.  Cook, stirring frequently, until soft and semi translucent.  About 3-5 minutes.
  2. Add ground beef and cook until brown, draining off any excess grease.
  3. Add all remaining ingredients and stir.  Simmer for at least 30 minutes.

Helpful hints

Substitute ground turkey to make it more diabetes friendly.

Make it your own by adding low potassium vegetables like peppers or carrots.
