Ingredients
- 1 pound cod fillets
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground rosemary
- 1/2 teaspoon black pepper
Preparation
- Preheat oven to 350° F.
- Flatten fish fillets and turn several times in olive oil to coat completely.
- Sprinkle fish with spices.
- Place in baking dish.
- Bake for approximately 20 to 25 minutes until fish flakes with a fork.
Helpful hints
- Experiment with different fish flavors. Mild fish include orange roughy, perch, cod and catfish.
- To flatten fish, place wax paper over and under fish then apply pressure with a heavy, flat object such as a large cast iron skillet.
- Adjust portions for a lower or higher protein diet.

First comment-how do you recalculate nutrient values if you leave out an item you may not have like a spice or celery? 2nd when you show pictures of the dish are you displaying as it should look according to the recipient? Or is the picture of the food item photoshopped? Dietitian comment: You can use the My Recipes creation feature in DaVita Diet helper to recalculate the recipe with your ingredient changes. Plus when you save it you will always have your version available for planning and tracking. We take the recipe photos ourselves using the actual recipe ingredients and scale with help from a professional food stylist and photographer,

Is it OK coat with bread crumbs? Dietitian comment: Yes you can substitute. unseasoned bread crumbs are lower ins sodium than seasoned bread crumbs.

Time needs to be cut, to 20-25 mins, and the pepper could be cut in half.
