Ingredients
- Two 4-ounce frozen cod fillets
- 24 low sodium butter crackers
- 1/4 cup all-purpose flour
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon ground pepper, or to taste
- 1 egg
- 2 hamburger buns
Preparation
- Thaw fish according to package directions. May also use fresh cod if desired.
- Preheat oven to 450F. Line a baking sheet with foil and spray with non-stick cooking spray.
- Add crackers to a zip top bag and crush with a rolling pin or crush between your hands. Add paprika and pepper, then pour out onto a medium size plate.
- Add the flour to a shallow bowl. Beat the egg in a separate bowl.
- Take one fillet and lay in flour coating both sides. Then do the same in the egg covering both sides. Finally cover with crackers crumbs all around the fish.
- Lay on prepared sheet pan and repeat with second fillet. Bake for 4-5 minutes, flip the fish over and bake 4-5 minutes longer. Cook to an internal temperature of at least 145F. Serve on hamburger bun.
