BACK TO RESULTS \\ Diet & Nutrition Recipes Breaded Fish Sandwich

Ingredients

  • Two 4-ounce frozen cod fillets
  • 24 low sodium butter crackers
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon ground pepper, or to taste
  • 1 egg
  • 2 hamburger buns

Preparation

  1. Thaw fish according to package directions. May also use fresh cod if desired.
  2. Preheat oven to 450F. Line a baking sheet with foil and spray with non-stick cooking spray.
  3. Add crackers to a zip top bag and crush with a rolling pin or crush between your hands. Add paprika and pepper, then pour out onto a medium size plate.
  4. Add the flour to a shallow bowl. Beat the egg in a separate bowl.
  5. Take one fillet and lay in flour coating both sides. Then do the same in the egg covering both sides. Finally cover with crackers crumbs all around the fish.
  6. Lay on prepared sheet pan and repeat with second fillet. Bake for 4-5 minutes, flip the fish over and bake 4-5 minutes longer. Cook to an internal temperature of at least 145F. Serve on hamburger bun.
