Lemon Caper Sauce

Ingredients

  • 2 tablespoons unsalted butter
  • 1-1/2 teaspoon all-purpose white flour
  • 1/2 cup reduced-sodium chicken broth
  • 1/4 cup white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon capers
  • 1/4 teaspoon white pepper 

Preparation

  1. Melt butter in the skillet over low heat.  Add flour and stir to mix.
  2. Pour broth into flour mixture and continue stirring for 1 minute. 
  3. Add wine, lemon juice, capers and pepper.  Continue to stir and cook until sauce thickens, about 3 to 5 minutes.

Helpful hints

  • Substitute finely ground black pepper for white pepper if desired.
  • Serve sauce over fish, chicken, meat or cooked pasta or vegetable of choice.

Recipe looks amazing. I'm just confused about the sodium content given the capers. Is this accurate? Dietitian Response: We understand what you mean, capers are salty. However, because we are only using 1 teaspoon in the whole recipe and there are 6 servings, that splits it up to make a serving much lower in sodium. Yes this sodium content is accurate. If you go over the 2 tablespoon serving size the sodium will add up. The other ingredients provide flavor to the dressing as well. We hope this helps.

Can this sauce be used a marinade for chicken? Dietitian Response: That is a great idea. We have not tested it that way, but with the butter and wine that would be nice to try and should have a good outcome.

My DH proclaimed this sauce to be as good and flavorful as soy sauce. High praise, coming from him. And a joy for me to be able to serve him something he so thoroughly enjoys. Thanks!
