Ingredients

  • 1 cup dry unseasoned bread crumbs
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon basil
  • 1/2 teaspoon dried celery leaves
  • 1/2 teaspoon paprika

Preparation

  1. Blend ingredients in a food processor or a blender. Store until ready to use.
  2. When ready to use, dip fresh meat into margarine or oil, then coat with coating mix, one piece at a time.
  3. Bake meat in the oven or fry in a skillet.

Helpful hints

  • Make homemade dry breadcrumbs by toasting bread in the oven until dry and crisp. Process in a food processor or blender to make crumbs.
  • This mix keeps well in the freezer. Make extra for later use.
  • Try the following variations for additional flavors:
  • Beef or veal: add 1/2 teaspoon marjoram or oregano
  • Chicken: add 1/2 teaspoon thyme and ½ teaspoon sage
  • Pork: add 1/2 teaspoon dried tarragon or 1/4 teaspoon allspice.
