Ingredients

  • 5 cups cucumbers
  • 2 cups red onion
  • 1/2 cup Kraft® Light Done Right!® Italian salad dressing
  • 1/4 cup sugar

Preparation

  1. Peel and seed cucumbers; slice onion.
  2. Mix all ingredients in a large bowl.
  3. Cover and refrigerate at least 30 minutes to marinate.
  4. Serve chilled.

Helpful hints

  • Decrease carbohydrate to 4 grams by using sugar substitute instead of sugar. 
  • Leftovers will keep in the refrigerator up to one week.

Could I substitute apple cider vinegar for the salad dressing? Dietitian response: Apologies or the late response. The recipe was not tested with apple cider vinegar, but if that is what you prefer that would be fine to try.

Making this tonight & probably will not have until tomorrow night, my question is; I didn't use salt & do not have Italian Dressing. I'm using sugar substitute but would like to know how much equals 1/4 cup? Thanks Dietitian comment: It depends on which sugar substitute you are using. If it is a product like Sweet'n'Low, Equal, Splenda or Stevia in individual serving packets, use 12 packets to replace 1/4 cup sugar. If using Splenda Granular, use 1/4 cup.
