Ingredients

  • 1 fresh peach
  • 1 tablespoon fresh shallot
  • 3 tablespoons champagne vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1/2 tablespoon dried basil

Preparation

  1. Peel the peach and remove the pit. Dice the shallot.
  2. Place all dressing ingredients into a small blender or food processor. Blend until smooth.
  3. Store dressing in an airtight container in the refrigerator for up to 1 week.

Helpful hints

  • White vinegar or apple cider vinegar may be substituted for champagne vinegar.
