Ingredients
- 2 large cucumbers
- 1/2 cup red onion
- 1/4 teaspoon black pepper
- 1 cup vinegar
- 1 cup cold tap water
- 2 tablespoons sugar
Preparation
- Peel and cube cucumbers; chop onion.
- In a medium bowl combine vegetables and black pepper.
- In a separate bowl combine vinegar and water with sugar and let stand for 15 minutes.
- Pour vinegar mixture over cucumber mixture and refrigerate for at least 3 hours before serving.

- Use sugar substitute to reduce carbohydrate to 5 grams.
