BACK TO RESULTS \\ Diet & Nutrition Recipes Marinated Cucumber Salad

Ingredients

  • 2 large cucumbers
  • 1/2 cup red onion
  • 1/4 teaspoon black pepper
  • 1 cup vinegar
  • 1 cup cold tap water
  • 2 tablespoons sugar

Preparation

  1. Peel and cube cucumbers; chop onion.
  2. In a medium bowl combine vegetables and black pepper.
  3. In a separate bowl combine vinegar and water with sugar and let stand for 15 minutes.
  4. Pour vinegar mixture over cucumber mixture and refrigerate for at least 3 hours before serving.

Helpful hints

  • Use sugar substitute to reduce carbohydrate to 5 grams.
  • Marinated Cucumber Salad goes great with chicken dishes or tuna or egg salad. It’s a refreshing accompaniment to any meal.
