Ingredients

  • 3 cups butterhead lettuce
  • 1 cup sliced mushrooms
  • 1/4 cup red onion
  • 1/2 cup carrots

Preparation

  1. Chop onion and shred carrot.
  2. Combine vegetables in a large bowl and toss.
  3. Divide into 4 portions and serve in chilled salad bowls.

Helpful hints

  • Use exact measures to ensure potassium content is not too high.
  • Add your favorite low-sodium salad dressing.
