BACK TO RESULTS \\ Diet & Nutrition Recipes Lemon Curry Chicken Salad

Ingredients

  • 4 tablespoons frozen lemonade concentrate
  • 1-1/2 cups chicken breast,cooked
  • 1-1/2 cups seedless green grapes
  • 1/2 cup celery
  • 1/4 cup canola oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon garlic powder

Preparation

  1. Thaw lemonade concentrate. Dice chicken. Cut grapes in half, and slice celery.
  2. In a large bowl, combine oil, lemonade concentrate and spices.
  3. Add remaining ingredients and toss lightly.
  4. Chill before serving.

Helpful hints

  • For variation substitute turkey for chicken and use purple grapes.
  • Adjust chicken if you need a higher or lower protein meal.
