BACK TO RESULTS \\ Diet & Nutrition Recipes Fruited Curry Chicken Salad

Ingredients

  • 4 cooked skinless, boneless chicken breasts
  • 1 stalk celery
  • 1/2 cup onion
  • 1 medium apple
  • 1/4 cup seedless red grapes
  • 1/4 cup seedless green grapes
  • 1/2 cup canned water chestnuts
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon curry powder
  • 3/4 cup mayonnaise 

Preparation

  1. Dice chicken. Chop celery, onion and apple. Drain and chop water chestnuts.
  2. In a large salad bowl, combine the chicken, celery, onion, apple, grapes, water chestnuts, pepper, curry powder and mayonnaise.
  3. Toss all together.
  4. Serve immediately or chill for later.

Helpful hints

  • To save time, use half a rotisserie chicken with the skin and bones removed.
