Ingredients
- 4 cooked skinless, boneless chicken breasts
- 1 stalk celery
- 1/2 cup onion
- 1 medium apple
- 1/4 cup seedless red grapes
- 1/4 cup seedless green grapes
- 1/2 cup canned water chestnuts
- 1/8 teaspoon black pepper
- 1/2 teaspoon curry powder
- 3/4 cup mayonnaise
Preparation
- Dice chicken. Chop celery, onion and apple. Drain and chop water chestnuts.
- In a large salad bowl, combine the chicken, celery, onion, apple, grapes, water chestnuts, pepper, curry powder and mayonnaise.
- Toss all together.
- Serve immediately or chill for later.
Helpful hints
- To save time, use half a rotisserie chicken with the skin and bones removed.
