Ingredients

  • 2 cups cooked chicken
  • 1 cup Gala apple
  • 1/2 cup celery
  • 2 tablespoons scallions
  • 1/4 cup dark raisins
  • 1/3 cup low-fat mayonnaise
  • 1 tablespoon low-fat sour cream
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon black pepper

Preparation

  1. Cube cooked chicken. Dice apple and celery. Chop scallions.
  2. Combine chicken, apple, celery, scallions and raisins in a large salad bowl.
  3. Whisk together mayonnaise, sour cream, lemon juice, cinnamon and black pepper. Pour over the chicken-apple mixture and toss.
  4. Refrigerate to chill prior to serving.

Helpful hints

  • The raisins can be eliminated to reduce potassium content to 270 mg per serving.
  • Spoon chicken salad in a pita pocket to serve as a sandwich or serve on top of leaf lettuce to make a salad.
