Ingredients
- 2 tablespoons onion
- 12 ounces lemonade
- 1/2 cup water
- 1 cup brown rice, uncooked
- 1 cup frozen mixed vegetables
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
Preparation
- Mince onion.
- Pour lemonade and water into rice cooker or saucepan. Add rice, onion, mixed vegetables and seasonings.
- Start rice cooker or cook on stove, covered, over medium heat for 20 minutes.
Helpful hints
- Fresh, frozen, bottled or canned lemonade may be used in this recipe. Be aware, some lemonades contain phosphate additives which increases phosphorus content. Read labels and avoid brands with this additive.
- Select a vegetable mix with carrots, corn, green beans, green peas or substitute your favorite low potassium frozen vegetable blend.
- If you have diabetes, try sugar-free lemonade in this recipe to lower carbohydrates by 5 grams per serving.
- For best results, do not remove cover or stir rice during cooking.
