Ingredients
- 8 ounces cream cheese
- 2 eggs
- 3/4 cup sugar
- 2 teaspoons vanilla extract
- 2 dozen paper cupcake liners
- 2 dozen vanilla wafers
- 1-1/2 cups apple pie filling
Preparation
- Set out cream cheese to soften for 1 hour before making tarts.
- Preheat oven to 350° F.
- Blend cream cheese, eggs, sugar and vanilla extract in a bowl and beat until smooth.
- Place cupcake liners in muffin pan. Put one vanilla wafer into each cupcake liner.
- Pour cream cheese mixture over vanilla wafer, about 3/4 full.
- Bake for 10 minutes. Remove tarts from oven and cool in the refrigerator.
- Immediately before serving top each tart with 1-1/2 tablespoons of fruit pie filling per tart.

- Suggested fruit pie fillings include cherry, blueberry, apple or strawberry.
