Ingredients
- 2 large eggs
- 3/4 cup canola oil
- 2 cups granulated sugar
- 3 teaspoons vanilla
- 4 medium apples
- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 cup chopped pecans
- 8 ounces cream cheese
- 2 cups powdered sugar
Preparation
- Preheat oven to 350º F. Spray 9″ x 13″ baking pan with non-stick cooking spray.
- Set cream cheese out to soften. Peel, core and chop apples.
- Mix together eggs, oil, sugar and 2 teaspoons vanilla. Stir in apples.
- In a separate bowl, stir together flour, cinnamon, baking soda and pecans.
- Add dry mixture to apple mixture and mix together.
- Put into baking pan and bake for one hour. Allow to cool.
- For icing, using a mixer, mix together cream cheese, powdered sugar and remaining vanilla.
- Spread icing over cake after it has cooled.
Helpful hints
- For people with diabetes, leave off the icing to reduce calories to 252 and carbohydrate to 33 g. Count as 2 carbohydrate choices.
- To reduce fat you can replace half the oil with unsweetened applesauce.
- Pecans are high in potassium and phosphorus. The amount contributed to one piece of cake is minimal as long as the recommended portion is followed. Otherwise you can reduce to 1/2 cup pecans or leave them out.
