BACK TO RESULTS \\ Diet & Nutrition Recipes Bev’s Raw Apple Cake

Ingredients

  • 2 large eggs
  • 3/4 cup canola oil
  • 2 cups granulated sugar
  • 3 teaspoons vanilla
  • 4 medium apples
  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 cup chopped pecans
  • 8 ounces cream cheese
  • 2 cups powdered sugar

Preparation

  1. Preheat oven to 350º F. Spray 9″ x 13″ baking pan with non-stick cooking spray.
  2. Set cream cheese out to soften. Peel, core and chop apples.
  3. Mix together eggs, oil, sugar and 2 teaspoons vanilla. Stir in apples.
  4. In a separate bowl, stir together flour, cinnamon, baking soda and pecans.
  5. Add dry mixture to apple mixture and mix together.
  6. Put into baking pan and bake for one hour. Allow to cool.
  7. For icing, using a mixer, mix together cream cheese, powdered sugar and remaining vanilla.
  8. Spread icing over cake after it has cooled.

Helpful hints

  • For people with diabetes, leave off the icing to reduce calories to 252 and carbohydrate to 33 g. Count as 2 carbohydrate choices.
  • To reduce fat you can replace half the oil with unsweetened applesauce.
  • Pecans are high in potassium and phosphorus. The amount contributed to one piece of cake is minimal as long as the recommended portion is followed. Otherwise you can reduce to 1/2 cup pecans or leave them out.
