Ingredients
- 4 pounds whole chicken
- 2 teaspoons Mrs. Dash® herb seasoning blend
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
Preparation
- Wash chicken and remove the inside giblets if they are included.
- In a small bowl combine seasoning blend, pepper and garlic powder.
- Sprinkle half the seasonings inside the chicken. Rub the remaining seasoning on the outside of the chicken.
- Place the chicken breast-side-up in an oval crock-pot or neck-up in a round crock-pot.
- Cover and cook on low setting for 8 hours.
- Remove chicken from bones and discard the skin.
Helpful hints
- No liquid or fat needs to be added. Chicken will make its own liquid/broth.
- Use the chicken in recipes that call for cooked chicken, or to make chicken salad or chicken soup.
- Make chicken broth with the bones and skin.
- To make chicken soup, add egg noodles, low sodium broth, carrot shreds and celery to diced chicken and broth.
- If you are on a lower protein diet, adjust the portion to match your meal plan.

Can I add any vegetables to this recipe? CKD stage 4. Thanks ?? Dietitian Response: Thank you for your question. Vegetables as a side would be a great addition to this recipe.

I have not made either this recipe yet nor the slow cooker creamy chicken. Can I use the same ingredients for crock pot chicken that are used for slow cooker creamy chicken? I realize the creamy chicken recipe is using chicken thighs. I have a whole chicken to cook in the crockpot which is more than the 1 1/2 lbs of thighs called for in the recipe, but I liked the idea of a creamy broth with carrots and peas. Thank you. Dietitian response: Apologies for the late response. Yes you can use the ingredients for the whole chicken, just keeping in mind that the whole chicken will need more time in the slow cooker, closer to that 8 hour mark like the Crock Pot chicken. It would be best to still add that cream cheese and peas at the last 30 minutes.

I don’t have a crockpot. Can I cook this any other way? I already have two air fryers as it is, and a kitchen stove. Could any of these work? Dietitian comment: I think the best alternative is to roast the chicken or if you want to use the stovetop you can stew it. I selected this recipe because I am in stage 2 CKD. I was told to watch phosphorous and potassium. my potassium is at 3.7 at this time. The recipe has 130mg of phosphorus and 160mg of potassium. Isnt that quite high? Dietitian comment: No those levels are considered to be kidney-friendly. Please work with your doctor and dietitian on your diet. In stage 2 most people have enough kidney function to remove potassium and phosphorus without needing to restrict depending on your food selections.

I made this chicken recipe today. It was so tender and delicious. We had a hard time taking it out if crock pot because it so tender. My whole family loved it

This has become one of our favorites. Its easy, it cooks all day while we are away, the chicken is moist and tender.
