Ingredients

  • 1 teaspoon onion
  • 1 teaspoon green bell pepper
  • 2 large eggs
  • 1 teaspoon butter
  • 1/8 teaspoon black pepper

Preparation

  1. Plug in waffle iron to heat.
  2. Finely chop onion and bell pepper. Melt the butter.
  3. In a bowl, lightly beat 2 eggs. Add in finely chopped vegetables, melted butter and black pepper.
  4. Spray waffle iron with cooking spray. Pour entire contents into waffle iron.
  5. Cook for 2 minutes, or follow waffle iron directions if your waffle iron has a “ready” indicator light.

Helpful hints

  • It is important not to whip too much air into the eggs.
