Ingredients
- 1 large egg
- 2 large egg whites
- 2 tablespoons 1% low fat milk
- 1/8 teaspoon black pepper
Preparation
- Spray a 12-ounce coffee cup with cooking spray. Combine the milk, egg and egg whites in the mug and beat until blended.
- Place coffee cup in microwave and cook for 45 seconds; remove and stir. Microwave an addition 30-45 seconds, until eggs are almost set.
- Sprinkle with pepper and enjoy.
Helpful hints
- Microwaves vary in cooking time. Adjust as needed to avoid overcooked eggs.
- Add 1/4 cup chopped onion, bell pepper or mushrooms for additional flavor.
- Add a dash of hot sauce if desired.
