Ingredients
- 2 medium russet potato
- 5 Tbsp vegetable oil. divided
- 1-pound lean ground beef
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon red pepper flakes
- 4 eggs
- 3/4 cup sharp cheddar cheese, shredded
- Six – 10” burrito-size flour tortillas
Preparation
- Shred potatoes. Bring a pot of water to a boil and add potatoes, cooking for 10-15 minutes. Drain and rinse and repeat boiling once more time. Drain.
- Heat 3 Tbsp vegetable oil in a nonstick pan over medium heat. Spread the shredded potatoes out in thin layer throughout the pan. Cook until crispy and golden, about 3-4 minutes per side, flipping with a spatula. Remove from pan and set aside.
- In the same pan over medium heat, add lean ground meat. Add paprika, garlic powder, ground black pepper, and red pepper flakes. Cook for about 7 minutes, frequently turning with spatula for even browning until meat has reached 160 °F. Drain and dispose of excess oil. Remove meat from pan and set aside.
- Heat 1 Tbsp of vegetable oil in the same pan over low heat. Crack and whisk eggs in a small bowl. Add to pan and scramble until eggs are set but not hard (145°F).
- Warm the tortillas in a clean, large skillet over medium heat, about 30 seconds each side. Tortillas should be bendable.
- Divide potatoes, ground meat, eggs, and cheese into the center of each tortilla. Fold the top of the tortilla towards the center and then fold each corner up to the center moving clockwise until you have a closed wrap (5 folds).
- Add 1 Tbsp vegetable oil to the large skillet over medium heat. Heat each wrap for about 30 seconds on each side until golden brown.
Helpful hints
Ground beef can be replaced with ground chicken or turkey. Egg whites or egg substitute (avoid those with phosphorus additives) can be used in place of whole eggs.
Wraps can be prepared ahead of time and reheated in the morning. They can last in the refrigerator for up to 3-4 days, or frozen and reheated.
Can substitute chicken, remove the wrap and remove cheddar cheese for a lower fat, diabetes-friendly meal.
