1 pork chop with vegetables and sauce

Ingredients

  • 1 medium onion
  • 1 medium bell pepper
  • 1 cup sliced mushrooms
  • 1 cup Basic White Sauce (see kidney-friendly recipe)
  • 4 pork chops (1 pound)

Preparation

  1. Chop the onion and bell pepper. Slice the mushrooms.
  2. Prepare Basic White Sauce from DaVita recipe.
  3. Spray a skillet with nonstick spray and heat over medium-high heat. Quickly sear pork chops on both sides; remove from skillet and place in an oven proof baking dish that has been sprayed with nonstick spray.
  4. Sauté vegetables in the same skillet, then spread over pork chops.
  5. Pour Basic White Sauce over pork and vegetables.
  6. Cover dish with foil and bake at 350° F for 1 hour.
  7. Remove from oven and serve.

Helpful hints

  • Smothered Pork Chops are delicious served over rice. Add your favorite low potassium vegetable and dessert for a complete meal.
  • To save time substitute 1 cup frozen vegetable mix for fresh onions and bell peppers.
  • Mori uses butter-flavored cooking spray, but any flavor works.

Hello! I'd like to make this for my husband, but the potassium level is higher than I'd like. Is there a way of lowering it? Thank you! Dietitian comment: You can cut the onion, bell pepper and mushrooms in half to reduce potassium by 73 mg per serving = 395 mg. Our cut-off for low vs. high potassium for entrees and one dish meals is 500 mg. Recipes with over 500 mg potassium are tagged with the High Potassium diet type.

We loved this recipe. It's easy to make, requires little clean-up and is delicious. The pork chops are so tender and flavorful.

Really starting to enjoy all the peppers, onions and mushrooms. Had some ready to go and it made the meal much easier to prepare. With the simple cook the meal was done in no time. A little dry for my wifes taste, but I at the leftovers for lunch the next day.
