Ingredients

  • 4 pounds boneless pork shoulder roast
  • 1 cup onion, chopped
  • 3 cloves garlic, chopped
  • 1 tablespoon oil
  • 1 cup orange flavored drink
  • 1/2 cup ketchup, no salt added
  • 3 tablespoons brown sugar
  • 3 tablespoons red wine vinegar
  • 2-1/2 tablespoons Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon black pepper

Preparation

  1. Cut pork into cubes, removing large pieces of fat. 
  2. In a large skillet, cook pork, onions and garlic in oil over medium heat for 5 minutes, stirring often. 
  3. Add remaining ingredients and stir well. Bring to a boil, cover and simmer over low heat for at least an hour. 
  4. Remove cover and cook over medium heat for 30 minutes or until most of liquid has evaporated. 
  5. Shred pork with 2 forks. Serve as an entrée or make pork sandwiches.
