Ingredients

  • 1 large red onion
  • 2 whole cloves
  • 1 cup white vinegar
  • 1/2 cup fresh lime juice
  • 1/2 cup sugar

Preparation

  1. Pour boiling water over thinly sliced onions and drain.
  2. Place onion slices and 2 whole cloves (optional) into 1 large or 2 small glass jars.
  3. In a saucepan mix the vinegar, lime juice and sugar and simmer until sugar is dissolved. Pour mixture over onions in the glass jars and seal. 

Helpful hints

  • Try Pickled Red Onions on fish tacos or hamburgers.
  • Refrigerate pickled onions until ready to serve. Keeps for 3 weeks in the refrigerator.
