Ingredients

  • 2-1/2 ounces cooked roast beef
  • 1 slice red onion
  • 1/4 red bell pepper
  • 4 cucumber slices
  • 1 romaine lettuce leaf
  • 1 flour tortilla, 6-inch
  • 1 tablespoon whipped cream cheese
  • 1/2 teaspoon Mrs. Dash herb seasoning blend
  • 1/2 cup grapes
  • 10 almonds, unsalted

Preparation

  1. Slice the roast beef and cucumber; chop the onion and bell pepper. Remove rib from romaine lettuce leaf.
  2. To prepare the beef rollup, spread cream cheese on the tortilla. Layer roast beef slices and vegetables on top. Sprinkle with herb seasoning.
  3. Roll tortilla up like a jelly roll and cut into 4 pieces.
  4. Place rollup, grapes and almonds on a plate or in divided lunch container.
