BACK TO RESULTS \\ Diet & Nutrition Recipes Buttermilk Pie

Ingredients

  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup butter
  • 2 tablespoons lemon juice
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1-1/2 cups sugar
  • 4 tablespoons all-purpose flour
  • 1 deep-dish pie crust, 9-inch

Preparation

  1. Preheat oven to 375° F.  Set butter out to soften.
  2. In a large mixing bowl, mix together buttermilk, eggs, softened butter, lemon juice, almond extract, vanilla extract, sugar and flour.
  3. Pour mixture into a deep-dish pie crust.
  4. Bake for one hour.
  5. Let cool and serve.

Helpful hints

  • Buttermilk is high in phosphorus and potassium but the portion per serving is small enough to keep this recipe kidney friendly.
