Southwestern Posole

Diet - CKD, Dialysis, Diabetes

Portions:  6

Serving size:  1-1/2 cups

Ingredients

  • 1 tablespoon oil
  • 1 pound pork steak, cut in 1" pieces (1 pound ground beef may be substituted)*
  • 1/2 cup onion, chopped
  • 1 clove garlic, chopped
  • 28-ounce can white hominy, drained (rinse to reduce sodium)
  • 4-ounce can diced green chiles
  • 4 cups low-sodium chicken broth
  • pepper to taste

Preparation

  1. Heat oil in a skillet over medium heat and brown pork pieces for 3 to 4 minutes.
  2. Add onion and garlic to skillet. Sauté until onion is tender.
  3. Add remaining ingredients and simmer for 30 to 45 minutes until meat is tender and flavors are mixed.
  4. Add water if more liquid is needed to make a soup.
