Southwestern Posole

Serving size: 1-1/2 cups
Ingredients
- 1 tablespoon oil
- 1 pound pork steak, cut in 1" pieces (1 pound ground beef may be substituted)*
- 1/2 cup onion, chopped
- 1 clove garlic, chopped
- 28-ounce can white hominy, drained (rinse to reduce sodium)
- 4-ounce can diced green chiles
- 4 cups low-sodium chicken broth
- pepper to taste
Preparation
- Heat oil in a skillet over medium heat and brown pork pieces for 3 to 4 minutes.
- Add onion and garlic to skillet. Sauté until onion is tender.
- Add remaining ingredients and simmer for 30 to 45 minutes until meat is tender and flavors are mixed.
- Add water if more liquid is needed to make a soup.
