Chicken Marsala is a famous, traditional Sicilian dish distinguished by its delicious sauce; a reduction of Marsala wine and shallots. Marsala wine is made only in Marsala, Italy from three types of locally grown grapes, and comes in sweet and dry flavors. Traditionally, sweet Marsala is recommended with chicken, but Michelle, a DaVita renal dietitian from New York, slightly modified the recipe to call for dry, so the signature taste remains with the sugar content reduced.
